Like they say that frying fish causing it to lose the omega 3's but broiling fish lets you keep the omega 3's. But broiling takes a long time and cannot always be done. Are there any fast ways to cook fish without it losing the omega fats?|||Try Wrapping the fish in Tin Foil and pan frying it.
NO fat or moisture is lost in the cooking process.
I then use the juices left in the foil, add a dash of lemon
and some chopped parsley and use it as a sauce.
Any Omega 3's that have come out of fish are now in the sauce/dressing.
Hope that helps. I eat a lot of fish as I go fishing a lot. This is still my favourite way to cook fish.

http://onedumbaussie.com|||It depends on what you are cooking. Fish like salmon, tuna and swordfish are best seared on medium high heat and served medium rare. This is, IMO, the most flavorful way to prepare oily fish and is ready in less than 10 min. Sear each side about 2 min per inch of thickness.|||I had exactly the same problem and couldn't find the answer anywhere.
